E.J. wanted to know how the gluten free recipes turned out.
Well, I can only speak for one so far, and I’m going to take the time to find the link…
As Kev prepared the filling for this pie he said “This chicken pot pie is going to knock it out of the park.”
And after he made the gluten free topping, which could have been icky, all sorts of unusual flours, and xanthan gum, new things for our pantry… and baked it… oh my goodness. It was DELICIOUS!!!! I think this just might be an every two week recipe. It is that good. The artichoke hearts in it are such a nice touch. And unlike a lot of pot pies, it is healthy. With only one crust, not a lot of added fat… very friendly on WW points. It is gone now. Dinner last night and tonight. Try it. You’ll like it.
And E.J. you can eat meat and potatoes on a gluten free diet. You just can’t eat, well, a bunch of other things. Check out this site (0ne you know well, eh?) This chicken pot pie does have a bit of dairy in it, so that might not work for you folks, but… it isn’t that much. I’m not sure how strict your dairy avoidance is.
I’m not quite gluten free yet. But closer.
And if all the recipes are this good. I’ll be fine.
